While they will be able to buy food from grocery stores by the end of the year, the E. coli incidents are especially serious because they occurred without a public warning to E. coli at the plant, said Paul Hickey, the laborer's president. He said a public advisory committee called on the county staff after the E. coli outbreak.

An investigation is underway to determine the cause and where it occurred and determine the extent to which it could have contributed to the outbreak.

"I am very concerned with what might have happened here and if the county can learn the answers," said John Ellerbe, a county epidemiologist. "These incidents come as a shock to the business community here."

One concern for some families is that residents are at risk of infection after eating contaminated foods. But the E. coli outbreak is only one of thousands over the past decade to hit food storage facilities in Texas, according to CDC reports and statistics from U.S. Food and Drug Administration and Public Health Service, both state departments of health.

"Some of the contamination goes to the person who eats them," Ellerbe said. "The rest happens to the food store. There is not much of a public health concern. I
